ForestBank|Truffle BAKERY
TruffleBAKERY Minami Yatsugatake is a multifunctional complex combining a lab, bakery, and café, located in the lush forests of Minami Yatsugatake, Yamanashi Prefecture.
Designed by SAISEI LABORATORY Co.,Ltd, the architecture is characterized by a symbolic composition—a soft brick ring approximately 130 meters in circumference—that gently defines the relationship between interior and exterior spaces. Embracing the site’s natural topography and existing trees, the design encourages the emergence of organic, spontaneous places to dwell throughout the landscape.
Inside, artworks and furniture by both domestic and international creators are curated to evoke an atmosphere unique to this place.
The site was originally an untouched forest of about 10,000 square meters. Together with an arborist, the team carefully evaluated 260 existing trees to determine which should be preserved or removed, ultimately retaining more than 90% of them in the final plan.
In harmony with this philosophy, NOU Inc. collected pruned branches, fallen leaves, and nuts from the site to create a café counter made primarily of ForestBank.
While newly constructed, the architecture embodies a concept of regenerating and inheriting the land’s natural resources.
The ForestBank counter stands as a symbolic element of the project, embodying the circulation of the land’s memory and materials—a tangible expression of coexistence between nature, architecture, and craft.
